Recipe – Mojito Shots

  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons + 3/4 teaspoon powdered unflavored gelatin
  • 3/4 cup fresh lime juice (alternatives: you can use 1 cup fresh lime juice for a stronger lime flavor, or 1/2 cup fresh lime juice for a stronger mint flavor)
  • 1 cup fresh mint leaves (lightly packed)
  • 1 cup white rum (e.g. Bacardi)

Combine sugar and water in a small saucepan and cook over medium heat. Bring to a simmer, stirring until sugar dissolves (approximately 4 minutes).

Turn heat down to low. Sprinkle gelatin into sugar syrup and whisk constantly over low heat until gelatin dissolves (approximately 1 minute).

Put lime juice and mint leaves in a medium glass bowl, and pour in sugar syrup. Cover and let steep for 15 minutes. Stir in rum. Strain mojito mixture into glass measuring cup or pitcher; press on mint leaves with a muddler (or back of spoon) to extract as much liquid as possible.

Arrange small paper cups (approximately 24 to 30) on a platter. Pour approximately 1 ounce of mojito mixture into each cup. Refrigerate shots until the gel sets (minimum 3 hours), or preferably overnight. Serve cold.
