Recipe – Crab Salad in Avocados

  • 1/3 cup finely chopped red onion
  • 4 tablespoons mayonnaise
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon ground cumin
  • 8 ounces crabmeat
  • 2 medium avocados (halved, pitted and removed from peels)

Stir together all ingredients (except avocados) in medium bowl. Season with salt and pepper.

Arrange avocado halves, cut side up, on plates. Scoop crab salad onto each avocado half. Garnish with cilantro and lime wedge.

Serve as lunch or dinner for 2. Or serve as hors d’oeuvres for 4, paired with Baja Fish Tacos or Mojito Shots.
