Recipe – Apricot Vodka
- 2 1/4 cups vodka (preferably 80 proof; e.g. Skyy Vodka)
- 3/4 pound fresh apricots, chopped
- 1 vanilla bean (whole)
- 1 cup sugar
- 1 cup water
- 1 empty clean 750-ml bottle with cap, or jar with lid
In a large glass bowl, combine vodka, apricots and vanilla bean (use whole bean; do not slice open). Cover and let stand at room temperature for 36 to 48 hours. Remove vanilla bean (bean can be rinsed, dried and saved for another use, like coffee liqueur).
Combine sugar and water in a small saucepan; bring to a simmer, stirring until sugar dissolves (approximately 4 minutes). Remove simple syrup from heat and let cool to room temperature. Then stir into vodka mixture.
Line a fine-mesh sieve or colander with cheesecloth. Strain vodka mixture through cheesecloth into a large glass bowl or pitcher. Then transfer vodka mixture into a 750-ml bottle with cap (or glass jar with lid).
Refrigerate, covered, 2 weeks before serving. Serve chilled.
